This course is a full recap of all of the techniques and tricks that I have learned in my many roles as a restaurant chef in one of London's best veggie restaurants (Bubala), and as a recipe writer for two of the biggest global companies ( Ottolenghi Test Kitchen and Mob).

I wanted to create an online course designed to teach the foundations of whole food, plant-based cooking.

I’ve seen just how many people want to cook more plant-based food, and what they get stuck on. Whether it’s flavour, confidence, time, ingredients or simply not knowing where to begin, I've heard all of your struggles.

That’s why I've created The Big Veg Blueprint - The ultimate guide to whole food, vegetable focused cooking, built to transform how you cook, without recipes.

The course begins January 5th, 2026

Created by a restaurant-trained chef (me), holistic health coach (still me), and vegan of 14 years (me!), this course combines professional culinary expertise with deep nutritional knowledge to help you master delicious, nourishing plant-based meals for vegans and omnivores alike, whether you're a beginner or looking to level up.

This isn’t a "how to go vegan" crash course and you definitely don't need to be vegan to benefit.

It’s for anyone who wants to cook with more confidence and rely less on recipes.


Big Veg Blueprint

What is it?

This is an 8 week online cooking course that teaches you how to cook with whole foods confidently, without relying on recipes.

Created by a chef, recipe writer and holistic health coach, it’s a step-by-step guide to mastering whole food, plant-based cooking through real techniques, flavour-building skills, and in

tuitive meal creation. You’ll learn how to think like a chef, build nourishing meals from scratch, and transform the way you cook by removing stress and adding confidence.

Who is it for?

It’s for anyone who wants to cook and eat more plants, whether you’re vegan, vegetarian, or just someone who wants to enjoy more delicious plant-forward recipes.

It’s built for beginners and home cooks who want to understand how to cook intuitively, not just follow recipes.

How is it delivered?

You will join a cohort of students who will all take the course together. Each week you will get access to a new module, following a different theme.

The course will be hosted in an easy-to-use learning platform. Each module includes a mix of video lessons (demonstrations, deep dives, and guided cooking sessions), downloadable PDFs packed with recipes and reference charts, and practical exercises to help you apply what you learn. You can watch on any device, at your own pace, with lifetime access to all future updates.

Whether you’re plant-based, plant-curious, or just tired of buying vegetables with the best of intentions and watching them wilt in your fridge or wither on your plate.
